Vegetable Kuruma


Ingredients:

Onions                         - 1 chopped
Tomato                        - 1 chopped
Ginger garlic paste - 1/2 teaspoon
Turmeric powder   -  1/2 teaspoon
Carrots,Beans,Potato,Sweet peas -1/2 cup each
Whole spices              -1 teaspoon.
Grated coconut       - 1 cup
Green Chilies           - 2 to 3
Cashews                     -  3 to 4
Oil                                  -2 tablespoon.

Preparation:
  • Grind the grated coconut,cashews and green chilly into a paste and keep aside.
  • Cook vegetables separately in less water.

Method:
  • Pour oil in a pan and fry the whole spices for a minute then add onions as they are cooked add Ginger garlic paste saute them till the raw smell goes.
  •  Add tomato to this then add turmeric powder and salt.
  • When the tomato turns mushy ,pour the cooked vegetables along with water.
  • Bring it to boil then pour the coconut paste  and let it boil for 3 to 5 minutes
  • Garnish with  some coriander 
Hot and tasty Vegetable kuruma ready to serve!!
