Shangai Rice

Ingredients:
  • Basmati Rice - 2 cups.
  • Garlic - 6 nos
  • Ginger - 1 piece
  • Red Chilli - 6 nos
  • Carrot, Beans, Cabbage , Capsicum -  1/2 cup.
  • Onion - 1/2 cup.
  • Leeks, Celery leaves - 1 hand.
  • Green Chilli - 2 nos.
  • Oil - 2 tablespoon.
  • Soya Sauce, Vinegar - 1/2 tablespoon.
  • Butter - 1 teaspoon.
  • Salt as needed.

Methods:
  • Wash the Basmati rice well before cooking and fry in butter for few minutes.Then take the rice with 3-3/4 cup water and a little salt and boil.
  • Take a frying pan and fry the onions, green chilies and other vegetables in oil and add little salt to it.
  • Next,  add soya sauce,vinegar leeks,celery leaves to it.
  • Make paste with Ginger ,garlic and red chillies ,add this paste to vegetables  ,close the pan and cook for few minutes.
  • Add the cooked rice and mix well with very light hands so that the rice grain doesn't break. Cook for about 3 minutes.
  • Take this Shanghai rice out in a rice serving dish.Garnish with dry fruits and green coriander leaves.
