Kathrikai Sambar
Ingredients :
Toor dal - 1/2 cup
Onions- 1 chopped.
Tomato - 1 chopped
Garlic - 4 pods
Tamarind extract - 1 cup
Brinjal/pepper/katrikai - 3 lenghtwise cut.
Green chilly - 2
Turmeic powder - 1/4 teaspoon
Chilly powder- 1/2 tablespoon .
Coriander powder -1/2 tablespoon.
for Seasoning:
Oil - 2 tablespoon
Mustard seeds - 1 teaspoon
Curry leaves - few.
Cumin -1/4 tablespoon
Asofetida - 1 pinch
Method:
- Pressure cook dal adding turmeric powder, garlic for up to 2 whistles.
- Meanwhile heat oil in pan add onions ,tomatoes,and brinjal saute them together with turmeric powder,chilly powder and coriander powder,cook till soft.
- Add tamarind water, cook on low for 5 to 10 minutes till gravy is slightly thickened.
- Add this to the cooked dal.
- Heat 1 tbs of coconut oil in other pan. Splutter mustard seeds followed by cumin seeds, red chilies, curry leaves. Add asafoetida in same oil, roast and pour everything into the sambar. Adjust salt
- Serve with rice, idli, dosa etc.
