Egg curry


Ingredients:

Eggs                             - 3(hard boiled)

Onion                        - 1(finely chopped)
Green chilly          - 2(sliced)
Ginger                       - 1 inch size
Garlic                        - 5 pods.
Tomato                     - 1 (chopped)
Potato                          -2 (cooked)
Turmeric powder       -1/4 tbsp
Chilly powder                -1/2 tbsp
Coriander powder      - 1 tbsp

for  frying & grinding:

Coconut                        - 1/2(grated)
Pepper                          - 1/2 tbsp
Fennel seeds            - 1/2 tbsp
Chilly powder           - 1/2 tbsp
Coconut oil                  - 2 tbsp

 for seasoning:

Coconut oil               - 2 tbsp
mustard                       - 1 tbsp
Curry leaves               - 8 -10
Red chilly                    - 2 nos

Method:


  • Fry grated coconut along with fennel seeds,pepper,garlic and saute till coconut becomes golden brown.
  • Grind the above mixture along with a little water so as to make a paste.
  • Heat coconut oil in a pan and saute onion, tomato and green chillies.
  • Add ginger,garlic paste to the pan
  • Add turmeric powder,chilly powder,coriander powder to the pan
  • After a few minutes, add cooked potato and egg (each egg sliced to two pieces).
  • Pour the coconut paste with some water and continue heating on medium heat.
  • When the gravy becomes thick, switch off the flame and serve.
