Varutharacha Sambar




Ingredients :

Dal - 1/2 cup
Potato -1
Carrots -1
Raw banana - 1/2
Snake guard -1/2 
Drumsticks - 1 or 2
Tamarind - 1 lemon size ball soaked in water
Tomato - 1 large
Okra -2 to 3 
Turmeric powder - 1/2 tsp
Chilly powder - 1/2 tsp

Preparation of Sambhar masala:

Grated coconut-3/4 cup
Coriander powder-1 tbs 
Dry red chillies-2 
Cumin seeds -1/2 tsp
Urad dal-1/2 tsp
Fenugreek seeds - 1/2 tsp 
Whole pepper -1/2 tsp
Curry leaves - 2
Shallots-2
Garlic -1

To Garnish :
Mustard seeds - 1 tsp 
Few curry leaves
Dry red chilly -1
Asafoetida -1/2 tsp
Cumin seeds - 1/2 tsp 

Directions:
  • Chop all vegetables (Use vegetables of your choice).
  • Pressure cook dal adding turmeric powder, chilly powder and salt along with vegetables except okra, tomatoes and drumsticks for up to 2 whistles.
  •  Meanwhile dry roast the coconuts till brown along with ingredients listed under grind. 
  • Grind  to a fine paste adding  water if needed.Add this to the cooked dal.
  • Add okra, drumsticks and tomatoes, cook till soft.
  • Add tamarind water, cook on low for 5 to 10 minutes till gravy is slightly thickened.
  • Heat 1 tbs of coconut oil in other pan.
  • Splutter mustard seeds followed by cumin seeds, red chillies, curry leaves. 
  • Add  asafoetida in same oil, roast and pour everything into the sambhar.
  • Adjust salt and add a piece of jaggery . 
  • Serve with Kuthari rice, idli, dosa etc.
