Nool Puttu
Ingredients
2 Cups of raw long grain rice powder [paccha-ari] One can also use parboiled,red rice powder which can also be lightly roasted
2 Cups of boiling water or less[ the amount would depend on the quality of the rice powder].
1 tsp of ghee/ coconut oil/
Equipment
Sevanazhi or a Press,using the tiny mutli-holed disc
Steaming plates or Idli moulds.
Method
- Bring the water to boil and add salt
- Slowly add rice flour to the hot water
- Switch off the flame and knead the dough with spatula.
- Dough should be in soft consistency neither too watery nor so dry.
- Spread a white cloth over a plate and add this dough to the cloth
- As the dough is very hot and difficult to knead directly with hands we are using cloth.
- Knead the dough well and keep aside.
- Now grease the idly moulds and sevanazhi moulds with oil.
- Fill the Sevanazhi or press with dough
- Press the dough through Sevanazhi onto the idly moulds and steam cook them in idly pot for 10 to 12 minutes.
- Take the idly moulds out and repeat the same till dough is over
- Take off the nool puttus from idly moulds.
- Now tasty Nool puttu or idiyappam is ready to serve.
- Granish with shredded coconut and sugar for kids or serve with chicken curry
